Pancakes go best with blackberry syrup—a fact that no one knows better than Silas Brombear. When Silas was a young lad, his grandfather taught him the art of syrup making, a hobby that had been passed down through the Brombear family for generations. While Silas enjoyed all sorts of syrups—from peach to blueberry to good ole-fashioned maple—it was the family’s recipe for blackberry syrup that truly won his heart. He discovered that this particular concoction (a mixture of fresh berries, orange juice, sugar, and a secret ingredient so secret that no one quite knew what it was) made everything taste better—especially homemade, fluffy buttermilk pancakes. For Silas, blackberry syrup was a source of comfort: a reminder of home, family, and time well spent. Thus, it came as no surprise a few years later when Silas decided to open his very own pancake house and share his love of syrup with the entire Smoky Mountain community.
